Wild Mushroom & Apple Turkey Stuffing

Ingredients

  • 1/4 cup NOOC Wild Mushroom & Sage Olive Oil
  • 2 tbsp NOOC Gravenstein Apple White Balsamic
  • 1/2 cup butter, melted
  • 2 cups onion, diced small
  • 2 cups celery, diced small
  • 2-4 cloves garlic, minced
  • 3 tbsp fresh sage, finely chopped
  • 2 tbsp fresh thyme, chopped
  • 1 bunch Italian parsley, chopped
  • 1 apple, chopped
  • 1 cup walnut pieces (optional)
  • 1 cup dried cranberries
  • 10 cups dried bread cubes
  • 4 cups chicken stock (adjust as needed)
  • Salt & pepper, to taste

Directions

  1. Sauté onions and celery in Wild Mushroom and Sage Olive Oil over medium-low heat until soft and translucent (do not brown).

  2. Add garlic, sage, thyme, and pepper, then increase heat to medium-high and sauté for another 2 minutes.
  3. Stir in Gravenstein Apple Balsamic, melted butter, parsley, apple, walnuts, cranberries, and mix well.
  4. Add bread cubes and chicken stock, tossing until thoroughly mixed and bread has softened (add more stock if necessary to achieve desired moistness).
  5. Season with salt and pepper to taste.
  6. Stuff the turkey with the prepared stuffing mixture. Refrigerate any remaining stuffing covered in a large bowl.
  7. After the turkey is cooked, combine the reserved stuffing with the cooked stuffing from the turkey. Place in a 9"x11" baking dish and bake uncovered at 350°F for 30 minutes, until the surface is golden brown and crispy.
