A cozy fall dinner made easy! Tender pork is seared and roasted with a sweet and savory glaze of Fig Balsamic, Garlic Olive Oil, Dijon and fresh herbs. Simple enough for a weeknight, but delicious enough for entertaining
1 pork tenderloin, about 1½ lb / 680 g
4 tbsp Garlic Olive Oil, divided
3 tbsp Fig Balsamic
1 tbsp Dijon mustard
1 tbsp honey
1 tsp fresh rosemary or thyme, chopped
½ tsp salt
¼ tsp black pepper
1 small shallot, sliced (optional)
Make the glaze: Mix Fig Balsamic, Dijon, honey, 1 tbsp Garlic Olive Oil and herbs.
Season: Pat pork dry and season with salt and pepper.
Sear: Heat remaining Garlic Olive Oil and brown pork for about 2 minutes per side.
Glaze: Brush half the fig mixture over the pork.
Roast: Bake at 400°F (205°C) for 15–20 minutes, or until the centre reaches 145°F (63°C).
Finish: Add remaining glaze, rest for 5–10 minutes, then slice and serve.
