A vibrant citrus-ginger boost to brighten your salad using our Persian Lime Olive Oil and Honey Ginger White Balsamic, to support you with wellness through cold season.
3 tbsp Persian Lime Olive Oil
2 tbsp Honey Ginger White Balsamic
Juice of ½ fresh lemon
1 tsp fresh grated ginger
Pinch turmeric
SaltWest Smashed Peppercorn and Sea Salt to taste
4 cups chopped kale (lightly massaged)
1 cup cooked quinoa
1 cup shredded carrots
1 orange, segmented
¼ cup pumpkin seeds
½ avocado, sliced
Optional: Grilled chicken or chickpeas for extra protein
Whisk together Persian Lime Olive Oil, Honey Ginger White Balsamic, fresh lemon juice, grated ginger, turmeric, salt, and pepper until well combined.
Place chopped kale in a large bowl and lightly massage with a small drizzle of dressing for 1–2 minutes until softened. Add cooked quinoa, shredded carrots, orange segments, avocado, and pumpkin seeds.
Drizzle remaining dressing over the salad, toss gently to combine, top with grilled chicken or chickpeas if desired, and serve immediately.
