2 tbsp Spicy Calabrian Pesto Infused Olive Oil
2 tbsp Traditional Balsamic Vinegar 18 Yr Aged
3-4 boneless, skinless chicken breasts (butterflied)
Salt & Pepper (to taste)
Preheat BBQ to medium (about 350-375F).
Butterfly the chicken: Place the chicken breast on the cutting board with what would have been the skin side down. Place one hand on the chicken breast, curving your fingers up slightly for safety. Insert the knife into the middle of the thickest part and cut horizontally; cut almost to the other side. Open it like a book.
Mix together the Spicy Calabrian Pesto Olive Oil and Traditional Balsamic in a small bowl and use a silicone basting brush to coat every surface of the chicken. This can go straight on the BBQ at this point or sit at room temperature for up to 2 hours (or refrigerate in a sealed container for up to 3 days).
