Marinade: Basil & Watermelon Grilled Shrimp Skewers

    • 4 TBSP Basil Infused Olive Oil
    • 2 TBSP Watermelon Rosé Balsamic

    • 1 TSP Garlic (minced)
    • 1 TSP Lemon Zest
    • 1 TBSP Lemon Juice
    • 1/2 TSP Sea Salt
    • 1/4 TSP Cracked Black Pepper

    • 1 lb Large Shrimp (peeled & deveined, tails on)
    • 1 Bell Pepper (cut into 1.5" pieces)
    • 1 Small Red Onion (cut into chunks)
    • Green Onion (chopped)

    • Lemon Wedges (for serving)

    Directions

    1. Prepare the Marinade: In a medium bowl, whisk together Basil Olive Oil, Watermelon Rosé Balsamic, garlic, lemon zest, juice, salt, and pepper.
    2. Marinate Shrimp: Add shrimp to the marinade and toss to coat evenly. Cover and refrigerate for 30 minutes, turning once. For best flavour, marinate up to 2 hours.
    3. Assemble Skewers: Thread shrimp onto skewers, alternating with pieces of bell pepper and onion.
    4. Grill: Preheat grill to medium-high heat. Lightly oil the grates. Grill skewers for 2–3 minutes per side, or until shrimp are opaque and lightly charred.
    5. Serve: Remove from grill and garnish with green onion and lemon wedges. Optional: drizzle with a bit more Watermelon Rosé Balsamic before serving.
