This marinated chicken recipe takes your BBQ or oven-roasted meals to the next level with Nelson Olive Oil Co.’s Blackberry-Ginger Dark Balsamic Vinegar and our UP Extra Virgin Olive Oil. With a few simple ingredients and a little planning ahead, you’ll achieve juicy, flavour-packed chicken that’s perfect for grilling. To maximise flavour, butterfly your chicken breasts, allowing the marinade to coat as much surface area as possible. For best results, marinate overnight, or for at least 2 hours if you're in a hurry.

4 chicken breasts (butterflied or filleted in 2 pieces)
1 clove garlic (finely minced)
Salt & Pepper (to taste)
Blend all ingredients except chicken in a large bowl. Add chicken to the bowl and coat thoroughly with the marinade.
Transfer into a ziplock bag or a sealed container and leave to marinade for 2 hours at room temperature (or overnight in the refrigerator), flipping the chicken a few times to ensure even coating.
Grill on BBQ, or pre-heat oven to 325 F and bake in a single layer in a glass or porcelain pan for about 20 mins, flipping half way through. Broil for a few minutes at the end to crisp up the top.
