This ultra-fresh salsa features Nelson Olive Oil Co Persian Lime Infused Olive Oil and Alfoos Mango White Balsamic. Try it with your favourite seafood or serve with tortilla chips as a snack! If you want it to keep a little longer in the fridge, don't add the avocado until just before serving.

1 tbsp NOOC Persian Lime Olive Oil
1 tbsp NOOC Alfoos Mango White Balsamic
1 ripe mango, diced small
1 ripe avocado, diced small
1/2 red pepper, diced small
1 jalapeño, seeded and minced
1/2 red onion, minced
1/4 cup fresh cilantro, chopped
1/2 lime, juiced
Salt & Pepper, to taste

Directions

Combine all ingredients except avocado.
Add avocado and gently toss to avoid squishing.
Can be made ahead of time and refrigerated for up to 3 days. Add avocado just before serving.
Serve with white fish, pork, chicken, or tortilla chips.
